We provide different paella recipes to suit every dietary need including vegan options, and we’re always organic and gluten free.

Paella Valenciana

Made with the original recipe found in manuscripts from the XVIII century. Made with organic chicken, giant white beans or Judiones from Spain, green beans, tomato, rosemary, smoked & sweet paprika, saffron from Castilla La Mancha and extra virgin olive oil. Gluten-free, Dairy-free.

Paella del Mar

Seafood Paella - Our award-winning paella! Made using local seafood such as Penncove mussels from across the water, Manila clams from our local beaches, wild caught prawns and calamari. Our sofrito is made with local organic caramelized onions, garlic, red and green bell peppers, tomatoes and extra virgin olive oil and sweet-smoked paprika from the Spanish province of Cáceres. Gluten-free, Dairy-free.

Paella del Campo

Meat Paella - Prepared with organic chicken, non-spicy chorizo and butifarra sausage from Spain. All cooked using our sofrito base of caramelized onions, garlic, bell peppers, tomatoes, Spanish saffron and extra virgin olive oil. Gluten-free.

Paella de la Huerta

Vegan Paella - Full of flavor, this paella isn't just for vegans. Using only organic, seasonal ingredients such as onions, garlic, bell peppers, giant white beans from Spain, asparagus, carrots, green beans, smoked-sweet paprika, zucchini, mushrooms, peas and tomatoes, rosemary, Spanish saffron and extra virgin olive oil. Gluten-free, Dairy-free.

Duck & Truffle Paella

One of our most popular paellas. Seared duck, caramelized onions, local mushrooms and tomato. It all goes into a rich saffron broth with minced black summer truffle, where the Bomba rice will cook. One can clearly taste the truffle and the saffron simultaneously. Gluten-free, Dairy-free.

Lobster Tail Paella

Spectacular paella with lobster tails and local mussels. Seafood lovers will be very pleased with this impressive paella. Split lobster tails are pre-seared on the paella to release the flavors that will become part of the saffron broth, combined with our organic vegetable stir fry comprised of caramelized onions, garlic, fresh bell peppers and tomatoes. Gluten-free, Dairy-free.

Paella Negra

Black Paella – The color and flavor of this interesting paella is achieved by using the ink of the calamari during the cooking process. This incredible paella offers calamari and wild caught prawns. Served with a dab of our own garlic aioli (contains organic milk) on top. Gluten-free.

Paella Mixta

Mixed Paella – This paella offers the full flavor of the meat, combined with the perfect blend of fresh seafood and local organic vegetables. Gluten-free.

Paella de Carabineros

Carabinero Prawns, caught off the southern coast of Spain and imported to the US. Very coveted, with a robust and distinct flavor, these exquisite Carabineros, also know as Scarlet Prawns are the star ingredient in this succulent paella. The rice is cooked in a deep, red concentrated seafood and veggie broth creating a caramelized layer that covers the surface of the paella. Also served with local Penncove mussels and Manila clams. Dungeness Crab Paella

Excellent paella made with Dungeness Crab caught right off the waters of the Puget Sound as well as Penncove mussels. Great option for the Pacific Northwest. Each plate of paella is served with half a crab.

Iberian Charcuterie Platters

Our charcuterie platters contain a selection of Manchego cheese, Iberian chorizo, Iberian ham, cured Iberian sausage, Iberian cured loin, grapes and stuffed Spanish olives.

Jamón Iberico (Grain fed or Acorn fed)

Cured for up to 4 years, from a 2,000 year old breed, this black hoofed ham is an artisanal product like no other and is considered the gold of Spain. Some may say even better than Kobe beef or Beluga caviar. Its meat has a complex flavor, with sweet and salty notes, a silky mouth-feel and an aroma of the diet that the pigs enjoy. The best ham in the world is meant to be enjoyed at room temperature and by itself in order to appreciate its perfection. The Iberian ham comes with a professional Iberian ham carver at the event with a ham carving station. You can choose between grain fed or acorn fed. This service comes with the entire leg of Iberian ham (Approximately 16-18 pounds).

Manchego Salad

A mix of fresh, organic greens topped with grated Spanish Manchego cheese, oven-roasted walnuts, dressed with a strawberry-fig balsamic glaze and extra virgin olive oil.

Crema Catalana

There is always the argument between the French and Spaniards of which one came first, Crème Brûlée or Crema Catalana. Of course we're going to say it was Crema Catalana. Crema Catalana is made with milk, whereas Crème Brûlée uses cream. Crema Catalana features the flavors of lemon and cinnamon, and Crème brûlée does not.

Rioja-Poached Pears

Rioja-poached pears is our signature dessert. We use organic pears and poach them in our wonderful blend of wine and spices. Our reduction sauce and a dollop of cream cap off a truly wonderful dish!
